It’s that time of year. I don’t know about you guys but im so sick of Chicken Soup. Try this recipe and see if you like it..
1 Med Salmon (cut into chunks)
1 Med Cod (cut into chunks)
Shrimp (large size) about 20 will work
1 Large Onion
4 Stalks of celery
2 Cloves Fresh Garlic (diced)
1 16oz Can of Tomato Puree
1 32oz Box of Vegetable Stock (not chicken or beef)
1 Bay Leaf
Seafood Seasoning from Mc.Cormick (dont get the kind with salt) get the kind with mixed herbs..and No Old Bay.
Dash of Hot Sauce or Red Pepper Flakes
Kosher Salt (Optional)
Cook everything in one pot..I hate washing dishes.
Chop Onion, Garlic and Celery and sautee in Olive Oil with Bay Leaf and Seasoning until tender. Do not burn the Garlic…Remove Bay Leaf… Turn down the heat to a simmer and add the stock and tomato puree..let simmer for about 20 minutes until the puree gets completely dissolved.
Fold in Salmon and Cod..(do not add shrimp yet) and continue to simmer for an additional 10 minutes. Do not stir it will toughen the fish.
Add Shrimp. Make sure to keep it covered and let the heat cook the shrimp for about 5 minutes.
Cook some white rice and serve soup over the rice.
